Even among people who routinely skip breakfast, some weekends (or evenings!) call for re-creating breakfast classics.  This breakfast sandwich is on a light and fluffy almond flour biscuit.  The hollandaise sauce is worth the effort – it looks complicated but it comes together in 2 minutes in the blender and really adds the extra touch needed to make this breakfast indulgent.  Along with healthy fat in the sauce, this sandwich packs a low-carb burst of protein for the morning with the meat, almond flour, and poached eggs.

Enjoy before heading outdoors to enjoy nature or just to do your normal activities- either way you’ll be sure to have energy all morning with this scrumptious start to the day!

Open-Faced Breakfast Sandwiches on Biscuits

Using the recipes below, assemble open-faced sandwiches on sliced open biscuits. Top with sausage or bacon, poached eggs, slices of cheddar, and hollandaise sauce as desired.

For the biscuits:

3-1/2 cups almond flour (find here)
1/3 cup coconut flour (find here)
2 eggs
1/4 cup honey (find here)
1/4 cup coconut water or coconut milk or almond milk
2 teaspoons apple cider vinegar
1 teaspoon baking soda
1/2 teaspoon sea salt
1/3 cup palm shortening or softened butter
Directions for the biscuits: Preheat oven to 350* F. Line a baking sheet with parchment paper. Mix the almond flour, coconut flour, eggs, honey, coconut water, apple cinder vinegar, baking soda, sea salt, and shortening in a bowl using a fork. Divide dough into 8 balls, and gently use your hands to form round biscuit shapes, dusting your hands with coconut flour if needed. Bake on the parchment-lined baking sheet, an inch or two apart, for 20 minutes. Allow to cool before slicing in half crosswise.

Breakfast Sausage

Ingredients:
3 lbs of ground beef or a combination of ground beef and ground pork (find here)
1-2 onions, chopped finely
1/2 teaspoon of 3 different sweet spices (cinnamon, allspice, nutmeg, ginger etc) (find here)
1 teaspoon cayenne pepper (find here)
1 teaspoon each of 4-5 savory spices (basil, cumin, coriander, ground pepper, sage, oregano, etc) (find here)
2 teaspoons sea salt (find here)
2 eggs
Directions:
Mix all ingredients together with a fork or a stand mixer until spices are thoroughly mixed into the meat. Shape into patties and fry in coconut oil on med to med-high until no longer pink in the center. If you’re pressed for time, only cook the amount you need today and form the rest into patties to stick in the freezer for later use.
If you have more time today and would like to save time later, cook all the patties and freeze.

Easy blender Hollandaise Sauce

Ingredients:
Two fresh egg yolks
juice of one lemon
a dash of salt and pepper
1/2 cup butter – melted.

Directions:
Put the egg yolk in the blender, turn it on medium, and slowly pour in the melted butter- taking maybe a minute to pour in the half cup. Then add the salt, pepper, and lemon juice. It will thicken as it cools.

Poached Eggs

Ingredients:
6 eggs
Filtered water

Directions:
Fill a large skillet with ½ an inch of filtered water. Turn on medium-high. Crack 6 eggs into a bowl and then slide them gently into the pot or skillet with the water. Cover. Cook until the whites are set but the yolks are still runny; 3-5 minutes. Remove with a slotted spoon.
