These homemade honey-cinnamon cough drops are simple to make on your stovetop, and contain a winning combination to soothe sore or itchy throats and clear stuffy noses.
In the pot of your Instant Pot, or in a sauce pan for use on the stovetop (choose a medium-large sauce pan, it will bubble up), combine honey, cinnamon, and optional cayenne with a whisk.
As the honey mixture heats, place optional sugar and cinnamon for coating in a pie dish. Use your finger to make many small indentions all over the sugar.
Once at the correct temperature, remove honey mixture from heat and working quickly, carefully spoon drops (about 1/4 teaspoon or desired amount) into the indentions in the sugar. This will take 2-3 'batches' in the cinnamon sugar.
Allow to set for 5 minutes, then gently shake pie pan to cover the top of the cough drops with sugar. After cough drops are firm, remove to another plate and repeat dropping the warm honey-mixture into the cinnamon sugar.
Continue to allow to set for 20 minutes.
After candy is set, store in an air-tight container for a week. Store in the freezer for longer storage.
If not using cinnamon-sugar mixture to coat, use 4 silicone candy molds to mold cough drops. Alternatively, you can drop the mixture onto greased parchment paper.
Cinnamon-sugar excess from coating the cough drops can be saved and used to sprinkle on toast, in coffee, over fruit, or wherever else you are using sugar and a little cinnamon would be yummy!
GAPS notes: You can coat your cough drops in date sugar if desired, or omit this step.
