Here's a sample recipe out of the Keto Sweets Cookbook - if you have an ice cream maker, make sure your ice cream maker bowl is in your freezer for yummy treats this week!
In a medium saucepan, heat the coconut milk over medium heat. While the coconut milk is warming, combine the egg yolks, MCT oil, erythritol, lemon juice, and monk fruit in a medium mixing bowl until completely combined.
The heating step is not necessary if you normally eat raw eggs. We eat raw egg yolks (read more about that here), but it does weird people out, so I included the directions for heating.
