Ingredients

  • 3 cups cabbage shredded (about half a small head of cabbage)
  • 3 green apples grated or diced


    For the Dressing
  • 1/2 cup yogurt recipe here
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon minced fresh ginger or 1/2 teaspoon dried
  • 1 teaspoon coarse sea salt find here

Instructions

  1. Combine the shredded cabbage and grated apples (using a grating attachment to your food processor works beautifully for both of these) in a large mixing bowl.
  2. Combine yogurt, apple cider vinegar, ginger, and sea salt in a small measuring cup or small bowl. If you would like to make the dressing earlier in the day, or even the day before, the flavors combine beautifully with added time.
  3. Toss the cabbage and apple mixture with the dressing.
  4. Enjoy!

Recipe Notes

This salad stores well even when it has been combined with dressing. I recommend serving it with something hearty and warm, like ribs, meatloaf, or pulled pork.
