Date Paste: Simple Homemade Sweetener for GAPS

Easy-to-make liquid sweetner can replace honey or maple syrup 1:1 in recipes or be used in place of jam to top coconut flour pancakes, waffles, or baked almond flour pancakes.

Ingredients

  • 2 cups dates pitted (find here)
  • 1 cup water
  • Juice of 1 lemon

Instructions

  1. Heat water until it's hot.
  2. Remove pits from dates if needed.
  3. Cover dates with warm water and lemon juice (water just needs to be above the dates to allow them all to soak) and allow to soak for 10 minutes or longer.
  4. Drain liquid, but reserve to add as needed when you are pureeing.
  5. Puree all ingredients in a blender or with an immersion blender, adding reserved liquid as needed to form a honey-like consistency that is smooth.
  6. Store covered in the fridge for up to 10 days.

Recipe Notes

When purchasing dates, if you buy them as 'date pieces' or 'chopped dates' watch for added ingredients, like rice flour (not allowed on GAPS). Buying dates pre-pitted makes this recipe even faster. I like these.
