This Apple Ginger Salad is a fresh take on the taste of fall. It’s also perfect to send in lunch boxes since it doesn’t wilt. The honey-citrus dressing brightens all the flavors, this is a favorite in our house!
Apple Ginger Salad
Ingredients:
1 apple, cored and chopped
1 tablespoon ginger root, grated
1 cup celery, chopped
1/2 cup raisins
1/2 cup crispy walnuts, chopped
2 tablespoon honey
1/3 cup orange juice, freshly squeezed
Directions:
Combine first five ingredients in a bowl. Blend together the honey and orange juice, then use it as dressing.
