Bacon-wrapped scallops are the perfect appetizer for a dinner party, or a perfect treat dinner to shake things up!  This Bacon-Wrapped Scallop recipe comes together in under 30 minutes, and is all done right in the oven.

Don’t skip pre-baking the bacon, that’s what allows the bacon to become cooked through without overcooking the scallops.  If your scallops are especially large (as the ones pictured, which are from ButcherBox), you may use a whole slice of bacon per scallop, overlapping partially.

These are like candy on the carnivore diet! So good, and they cook quickly in the oven. For packing lunch, they can be kept warm in a thermos.

Ingredients

  • 8 large sea scallops
  • 4 slices thin bacon Applegate or ButcherBox bacon are good thickenesses

Instructions

  1. Preheat oven to 425*F and line a baking sheet with parchment paper. Cut bacon in half crosswise. Precook bacon for 3-4 minutes flat on the parchment. As the bacon cooks, pat scallops dry with paper towels and set aside.
  2. Once bacon has cooled until it’s cool enough to touch, wrap bacon around each scallop and secure with a toothpick.
  3. Place on baking sheet, and repeat with the remaining scallops. Bake for 12 minutes and then serve warm.
