Beef tongue is delicious and tender when cooked in the Instant Pot. When cooked in water, the tough outer layer is easy to peel off, and then the boneless roast can be sliced and served on its own and often it is used as taco meat. Eating the tongue of the cow is part of nose-to-tail eating, and like liver and bone marrow, many of us don’t know how to prepare any more than ground beef and maybe a steak or roast.
Tongue is tender, full of collagen, and boneless- making it nearly melt in your mouth with proper cooking.
Though seeing the big tongue on a plate can be intimidating, preparing tongue in the Instant Pot is really simple to make tender and delicious.

Beef Tongue
Ingredients
- 1 beef tongue
- 1/2 teaspoon Sea salt
- Filtered water to cover
Instructions

Thaw beef tongue and remove from packaging but do not peel.

Place tongue in Instant Pot and sprinkle with 1/2 teaspoon sea salt.

Cover salted tongue with filtered water until the water covers the tongue by about 1/2 inch.

Lock lid, set Instant Pot to seal, and cook on high pressure (manual for some models) for 90 minutes. Allow pressure to naturally release (do not quick release).

Remove tongue from the water and allow to cool on a cutting board. Peel off exterior and slice meat or chop into bite-sized pieces.
